Go on a journey to the Mediterranean via a Portuguese grill with this simple meal of chicken thighs, marinated rice, and a leafy salad. This dish is perfect when you are short on time and ideas on what to cook for dinner when you want something quick, easy and healthy.

Ingredients
500g chicken thigh fillets 500 grams chicken thigh fillets
20g Nando’s medium bag & bake spice seasoning 20 grams Nando’s medium bag & bake spice seasoning
120g Ben’s Original +veg Mediterranean style veg, tomato & brown rice 120 grams Ben’s Original +veg Mediterranean style veg, tomato & brown rice
285g Woolworths Honey mustard salad kit 285 grams Woolworths Honey mustard salad kit
Method
Step 1: Preheat oven to 210°C/190°C fan forced.
Step 2: Place chicken in the baking bag provided. Add peri-peri spice mix, then fold bag twice to enclose. Shake bag gently to coat. Place bag flat and seam side down on a large baking tray. Place on the bottom rack in the oven. Bake for 30 minutes or until chicken is golden and cooked through. Carefully open bag and spoon cooking juices over the chicken.
Step 3: Meanwhile, heat rice according to packet instructions. Prepare salad according to packet instructions.
Step 4: Divide rice, salad, and chicken between plates. Serve.
